People moan about Behringer but I think most of the criticism is unfair 
and Behringer mics are among the best *at their price point*. If you are 
on a limited budget then they are certainly worth looking at. I use them 
for choral work with my local church choir and in the past I've recorded 
acoustic instruments and solo vocals. I've been very pleased with the 
results.

B-1 = large diaphragm condenser, cardioid
C-2 = small diaphragm condenser, cardioid
B-5 = small diaphragm condenser, cardioid or omni

Either the B-1 or a pair of C-2s or B-5s if you need stereo. Pair of 
C-2s sounds good on classical guitar if you put one over the sound hole 
and one over the frets.

Pair of B-5s, every single time. I prefer the sound of a pair of omni 
mics in AB layout than a pair of cardioid mics in XY or ORTF layout, but 
it depends strongly on the room.
