I think you are being very vague about what you are actually looking
for.  For starters, take a look at http://linux-sound.org/guitar.html.
Otherwise, it seems to me that you're looking for a combination of
sequencer/sampler/effects processor (any of those ca be found in
various sections of the http://linux-sound.org website).
