Hydrogen / ZynAddSubFX are usually good for demos. I'd suggest 
Rosegarden, but I suspect you're deliberately avoiding that.

Pd is also fun to show off, but may be more complex and may require a 
little more preparation. The tutorial patches can be handy here.
