I have an edirol UA-25 and it works very nicely with linux (it's usb,
plug it in and it "just works"). Has two audio inputs, details here:
http://www.roland.com/products/en/UA-25/features.html.

I'm very much the amateur though so while it's fine for me you may
want a more informed opinion on it's quality compared to other similar
devices.
