Hi Confrey,

You want to use MIDI continuous controller #7, a.k.a. the MIDI volume 
controller. I use it for exactly the purpose you describe. Basically, 
however long the note is, you'll fill that length with CC #7 values 
ascending or descending, as you like. Some MIDI sequencers include a 
crescendo/decrescendo fill feature that does it for you.
