Most pianos actually have two presets. Press and lock
the 'soft' pedal to get the second. :-)

For some instruments, creating the patch or sound is
considered part of the art of playing them. That is
certainly the case for synthesisers, and before these
were equipped with banks of presets (i.e. in the analog
days), there actually was a lot of creativity in using
them. I do agree with Malte that this is lacking today,
with some rare exceptions. Today most people use a synth
as a cheap substitute for a real instrument or to create
standardized 'synth' sounds, and not as an instrument in
its own right. The result is in most cases just boring.
