In terms of performance Mac vs linux it's not really a matter of OS but
more of hw/cpu involved... plus ~800€ for that bitten apple ;-)

Got yourself a PC, at the same cost of an iMac probably you can buy a
server with 8GbRAM, 4 core cpu and SATA raid...
