I'ver recently written a small tool for this purpose. It's called
hrec, and just a couple of weeks ago I've fixed a bunch of problems
with it.  It now works and looks a lot better than the first
iteration.  Still lots of work ahead, but I personally use it
regularly for such situations.

It will eat space like crazy, because the recording is 32bit float --
default jack format, though if there's interest, I could add some
options to change the recording format to something more economical.

It's ecasound under the hood, so stability shouldn't be an issue.
