The advantage of using two shelf filters would be that you can have
some control over the slope of the transition region.

By combining even more shelf filters you can get as close as you
want to the limiting case, which is what I would call a 'tilt EQ':
a filter that has a constant (+ or -) slope (in dB/oct) over the
entire audio range. This can be done _exactly_ only if the slope
is an integer multiple of 6dB/oct.
