I actually had some difficulty getting gigedit (used to create instruents) to work on my machine, so I'm hesitant to spend considerable time on it unless I can confirm that it has this functionality. Any LinuxSampler users care to comment?

I've never used it for those purposes, but give LinuxSampler a try, it might do what you're after.
