On that particular song I'm just playing AZR3 by itself.  I use the Leslie simulator built into AZR3 and click the "Complex" box. You can maybe see me wiggling the modwheel on the keyboard to slow the Leslie down and speed it up.  I set the "belt" to 0, because I like the sound of a Leslie taking forever to spin down. I use a little vibrato, and I have the click set to 9. I like the "2" waveform shape, it's a little closer to the flattened tonewheel sound and gives some nice harmonics. I don't use percussion unless I'm trying to do jazz.

That song is a gospel/blues, so I use pretty standard Hammond drawbar positions: 888000000 in the loud parts, 800000001 for the quiet parts.
