unless your ADAT device understands "double-speed" (where the number of
channels is cut in half, and samples for 1 real channel are sent on 2
channels at a time), the ADAT standard is limited to 48kHz.

RME devices, and many others, do understand this "convention". I'm not
aware of any that do not. What piece of equipment do you have connected
to your RME multiface?
