Hi all,
Not an area I'm that familiar with, but are there any good libraries out there
that can do formant analysis of speech?

The formant analysis code from snack
http://www.speech.kth.se/snack/
is the code from the well known ESPS package and most praised in the speech
community. There is a good f0 analyzer, too.

CMU Sphinx (Java) uses Cepstra for recognition.
That's the Fourier transform of the log-magnitude spectrum:
