I'm a home studio enthusiast and also a former JAVA programmer.
I'm looking at combining these interests and contributing to a
project, but most apps seem to be written in C++.
Any suggestions? Anyone involved in any good JAVA projects?

That's because c/c++/etc are far superior for this task. It's really
not that hard to learn c/c++ if you've got a programming mindset and
it fits in the system a lot better. I'd recommend c myself as it's
less likely you'll program in a "java" style and you can then learn
good c style. Ask on list if you want pointers. Basically every lib
you want to use is in c or has c binding where as other languages have
less library support.

Check out this syntheditor which is written in Java, a project which
needs developers certainly:

As far as I know its the best open source syntheditor and with the cease
of Emagics SoundDiver its a need to come up with an alternative, at
least when you have some hardware synths which a heavy to edit.

Increase of CPU power and JIT VMs or gcj make it possible to develop
certain kinds of audio software.
Compared to C/C++ some problems you might find are:
- The unpredictability of the garbage collector.
- A higher latency.
- A slower GUI.
Check out http://www.jsresources.org for a lot of resources and examples.
javasound-interest(a)java.sun.com is a mailing list where your questions
will get more informed answers.
You may also want to have a look at Qt (www.trolltech.com). It is a
C++ framework that bears a certain resemblance to Java APIs.

Try and look at Eisenkraut and SwingOSC. (both on Sourceforge).
Sciss really needs co-developers for these interesting projects.

The JJack project (jjack.berlios.de) still wants to mature.
If you like to contribute to this infrastructural part of the Linux
audio world, which enables other Java programs to use Linux audio,

++vote. If Java sound needs one thing it needs JACK support.
Unfortunately it doesn't seem like that will happen at the JavaSound API
level, hence the need for JJack or something similar. This single
improvement would vastly improve the capabilities of many
otherwise-excellent Java soundapps.
