In something like ingen or AlsaModular Synth,
you have to add a module that allows reception of MIDI controller input. In
AMS, there's a quad MIDI-CV module that allows you to assign four MIDI CC
controllers.
Concerning AMS you forgot to mention that you could simply use the build
in "Control Center" (menu "View/Control Center), which allows to match
any MIDI controller to any kind of slider/parameter and module you
