You could try Steven Cook's VCS3 emulation for Csound:

It doesn't look much fun trying to write .sco files for it though. If I
ever figure out how to write a MIDI-based synth on Linux I might have a
go at it. (I'm glad I bought a MIDI keyboard with lots of knobs and
faders on now!)
Oh damn, I didn't want to post Steven Cook's VCS3 Csound .orc and .sco
but Ben McAllister's FLTK GUI for Steven's Csound instrument.
I couldn't find a working link for Ben's version so I uploaded my
tweaked version to
http://home.in.tum.de/~gutsfeld/other/vcs3_csound_gui.tar.gz [13K]
You probably have to adapt the CsOptions and sampling rate (sr) at the
beginning of the .csd file to your system.
