The 5.1 has 6 channels out, 2 in.
But, rather than buying 2, consider springing for the Platinum. The
LiveDrive gives you at least 2 more analog ins and 2 more outs, plus
SPDIF.

Thanks for the suggestions. Is the capabilities for the
Soundblasters going to be better with Alsa than something like the
Maudio 2496? I'm not going to be using the card professionally, but I do
want hardware mixing.
