In my limited experience I've found that the
ease of mapping MIDI
controller knobs to their software equivalents varies from
application to application. In Ardour, for example, one middle clicks
on a screen control, say, a mixer fader and a prompt appears telling
you to move the desired hardware knob. This seems to work quite well.
At least on my system, that is Ctrl+middle click
