used Echo Indigo (PCMCIA).
Is what I want viable at all with a reasonable latency? What software
setup can I use for that? Does anybody here use something similar live?

You may have a look at brian's amsynth site, he list and describe a
couple of Linux soft synth's, give sound examples and patches for them.
That could make it a bit easier for you to find what you are looking for.
