If I get alsa to recognize the device_mode=0660 (for instance by
changing my potentially wrong kernel .config), where would the
oss-emulation of my card that is now at /proc/asound/card1/pcm0p/oss
show up in /dev? And are one of the devices (/proc/... or /dev) better
in terms of a) stability b) latency c) supportedness d) something else
or are they equal?

There is no way, except
changing ALSA's source code.
The permissions of pcmxx/oss are set in the snd_pcm_oss_proc_init()
function in alsa-kernel/core/oss/pcm_oss.c (entry->mode).
