Can anyone recommend something to use for granular synthesis? If
possible, maybe a VST which runs on Linux.
Not a VST, but it might help:

Iaian McCurdy's Csound examples, most if not all come with ready made
GUIs. There are some granular instruments amongst them. You may even
find VSTs built with Cabbage, which is also based on Csound.
