My daughter seems to be much more interested in singing along with dance-pop tracks than
in creating her own.
There's a LADSPA plugin in the SWH collection that does this, using the
middle-channel removal technique that others have mentioned:

Success will of course vary, but the attenuation slider at least lets
you control how much of the centre channel gets chopped out, so you can
try to eliminate enough vocal without hurting the rest of the track too
much.
