+1 to tuxguitar, but Ken plays keys.. still, it might work OK,
although the tab output option would be less useful!

TuxGuitar has an extremely easy way of inputing notes using the numeric
keyboard as tablature (string/fret), or just point and click notes.
Chords names and/or fretboards are a shortcut away
It outputs staff, tab or both in pdf or LilyPond
