I tried disabling gnome support, but the compile still fails at the same
point. I also tried earlier versions of jack-rack with the same result. Has
anyone come across this problem (and a work-around) before?

Use locate (or find) to find version2 of glib.h. Make the soft link
/usr/include/glib-2.0 to whatever directory glib.h is found in.
