WARNING: shameless plug ahead
I'ver recently written a small tool for this
purpose. It's called
hrec, and just a couple of weeks ago I've fixed a bunch of problems
with it. It now works and looks a lot better than the first
iteration. Still lots of work ahead, but I personally use it
regularly for such situations.
It will eat space like crazy, because the recording is 32bit float --
default jack format, though if there's interest, I could add some
options to change the recording format to something more economical.
It's ecasound under the hood, so stability shouldn't be an issue.

Nama also attempts to provide
recording facilities using Ecasound.[1]
I would be very interested in hearing about your
experience, and
whether it does the job for you. I don't mind being yelled at.
A special-built tool can be quite helpful.
Best wishes,
Joel
