Hello,
How is the avplay binary, part of libav, produced at compilation
time ? avconv and avprobe are produced and installed, but there's no
sign of avplay. configure only have a --disable-avplay option. The
make log shows no sign of avplay but shows the compiling of avprobe and
avconv. libav is configured simply with:
./configure --enable-shared
This is libav-11.8.
What is the incantation to have avplay built ?

Thanks ! That helped getting it built. More specifically I think,
since sdl-config was not on the system and since it is part of
libsdl-dev, the installation of libsdl-dev made libav build avplay. In
this case sdl is version 1.2.15.

Yes indeed. I installed SDL2 although there is no libsdl2-dev package
for Linux Mint 17, only a u386 that will suppress a ton of other
packages upon installation. Other sdl2-dev packages are provided, such
as libsdl2-ttf-dev, libsdl2-net-dev, libsdl2-gfx-dev, etc. Although I do
not want to install all of them to find out if the base SDL2 headers
are provided in there somewhere (which should not).
I think I will attempt to build SDL2 from source instead.

Builds very easily. A simple ./configure; make; make install
Thereafter ffmpeg built also nicely, including ffplay.

It's self-explaining. Even running configure and make might not be
required, but I would run it anyway, even while checkinstall should
work without sudo and an additional sudo dpkg.
You not necessarily need to add dependencies. If I don't build DEBs the
Debian/Ubuntu way with control and rules files and a changelog, but
instead use checkinstall, I don't use all options, e.g. for Claws:

A bit of background.
What is behind this is the problem that Bitwig cannot read some
AIFF files inasmuch as it will play them silently and will not show any
waveform for them. Whereas the same AIFF test file will play OK in
Ardour, Renoise and with vlc.
Exchanging with Bitwig support, the same AIFF file will play fine on
teir systems (Linux, Mac, Windows), so there might be a problem with
libav/ffmpeg. Ardour is using linsndfile (confirmed by Robin). I do
not know for Renoise and vlc, not easy to track with ldd.
Using then the original avplay from Linux Mint 17 on that file, and
comparing with another AIFF file that plays good, it turned out that
avplay cannot play that file.
So I built both libav and ffmepg from source since the Linux Mint 17
system is a tad old and I certainly do not want to upgrade the OS, at
least for now. Both players then can read the test file.
So it looks good so far, but they're installed in the
default /usr/local/ location.
And this is where the checkinstall, which I did not know about, utility
might be very handy, if it does what it says it can do.

Is there any other detail to be aware of, apart from the example you
provided, regarding running checkinstall and, most importantly, using
the generated package to replace the existing installed components ?

No! Just keep in mind that Debian and Ubuntu split packages and
make install as well as checkinstall don't do this, so your package does
replace package.deb, libpackage.deb, libpackage-dev.deb etc. with
package.deb only, providing everything. So you need to remove all the
unneeded packages [1].

At some point it might be less work to use the Debian/Ubuntu source
package with existing rules and control files and just to replace the
source by another version of source code. However, using equivs to
generate a few dummy packages is less work and there's no learning
curve, it's easy to use.
If you often do things like this, consider to use a distro with an
easier to use package management and a sane package policy. Arch Linux
usually doesn't split packages and building a package is very easy to
do.

Looks more like I'll be going with a configure system prefix.

I know, but the idea here was do first check if the new libav/ffmpeg
would by OK by themselves. I presume I could go the configure way
now. But, the picture is not so clear since the /usr/local/ location
should not matter (ldconfig was run and the avplay for instance is
available w/o specifying the path) and Bitwig still does not play right
the test file.

Hmmmm... This I am not keen about. After years and years of building
Linux systems from scratch (LFS, BLFS) for both home and work, I am
using now a packaging system that's provided by the OS because it's
convenient but I still think that maintainers do absurd links, the
typical one being adding emacs in the dependencies because there is a
lisp file in a package.
Likewise, removing stuff does not forebode good tidings. I guess I
could do a dry run. And I could look at the control file.

Keeping the tons of packages and just overwriting could work, too.
Assuming two versions of libs are provided, this shouldn't cause an
issue.
Anyway, as soon as something compiled by yourself gets upgarded by
repositories, or a dependency of something you compiled, you could run
into trouble. Fortunately Ubuntu stays with major versions of libs,
usually only dot versions should change, so you shouldn't expect soname
issues, but OTOH you're using Mint and not Ubuntu.
You could hold/lock packages. Note, a package locked by Synaptic might
not be hold by apt.
