Input 2 1/4" phono (stereo output from a keyboard or computer sound
card, not a guitar) and turn it into a SINGLE balanced XLR output?
I did some quick searching via Google and found units that out put TWO
XLR channels - one for each input channel. But that's not what I'm
looking for.

XLR leads are mono right? So if you're putting in a stereo signal to the
DI, you're going to have two XLR outs: keeping the stereo.
If you're determined to get the signals to one XLR either combine the
stereo to mono, or just use one output of your synth. By using one XLR at
*any* point in the signal chain you're going to lose your stereo image. Why
not use 2 XLR's?

there are only 3 contacts in the usual XLR, so it can be a mono balanced
connection or a stereo unbalanced ... you would need a 5 pin connector for
stereo balanced, certainly there are such beasts but they are much less common.

I'd love to use 2 XLRs, but we don't have enough channels on our snake
anymore (combination of some added singers and one non-working line in
the snake).

If you can't use just the left or right output, but need both, than you
should decouple the left and right to merge them.

If the DI box does use transformers, decoupling by resistors might cause
a high-path filter.

One chain I can think of is:

There's several $40 devices out ther for the analog/spdif conversion.
The spdif to AES conversion could probably be done with a couple of Hosa
CDL-313 boxes (about $80). (But I'm new to SPDIF and AES so I might be
missing something.)
A cheaper way that *might* work to send S/PDIF over XLR is to run the
S/PDIF signal through a couple DI's. Since the S/PDIF signal is pretty
resistant to noise -- I think this is pretty likely to work.

I'm not an authority on the subject -- but I would expect that
cross-talk would not be a problem, since all the signals are being sent

Wouldn't this cause cross-talk? "Received" digital noise by the analog
cables, that are parallel to the digital cable?

Never seen one. Repair the snake ? If it's one of those with
the cable flaring out to a number of very thin ones with an
XLR on each, you can be 99% sure the defect is at one of the
ends. Thin cable gets pulled, cable clamp in the XLR isn't
designed to hold it, one or two signal wires break inside
the XLR.

Whirlwind makes one called the AV Link, or something of the sort, which
will do exactly what you want.
