I won't recommend an iPAD for stage usage, regarding solidity and
the fact that it depends on battery, even if you connect it to a power
supply, but OTOH compared to a Linux solution, you could put the iPAD
on top of a master keyboard and get a perfect GUI and you could purchase
all kinds of synth for around 5,-€ per synth, some as the CMI are a
little bit more expensive, but most of those synth are far better than
the quality we know from Linux synth. Linux might provide a few
outstanding FLOSS exceptions, offhand only Yoshimi comes to my mind and
indeed Yoshimi is a good reason to build a stage set-up based on Linux,
but OTOH Yoshimi is not a competitor to a piano related sample player,
a vintage emulation or modern granular synth you could get by iStore and
at least not a replacement for your stage proved Nord piano.
It's simply not the domain of Linux to replace stage gear. Imagine you
would follow Len's tip, to use an USB "Qwerty"-keyboard as the remote
control. On stage? A 20 meter long USB cable, IOW longer than USB norm
allows and in addition it would be another cable on stage, a computer
data cable, not an audio signal cable, so think over shielding,
anybody playing a Clavinet or single coil guitar might not like
additional electric smog. It's the summa of things to consider for
stage usage, not alone the will to handle experimental gear.

actually "Schnaps" is the German word for "hard liquor". I only want
to
point out, that the OP should take a pause for breath and after that
reconsider, if an emotional, idialistic, euphoric feeling should be the
base to enlarge stage equipment by FLOSS, to replace a Nord Stage 2 EX.
Funny enough that indeed your project, Yoshimi, is a good reason to risk
something like this, but Yoshimi does not replace pianos provided by a
Nord Stage 2 EX.

I'm now quite happy to continue exploring the stuff I was asking about with
people who are interested :)
Currently I'm thinking of grabbing a Zotac Intel N3050 and one of the couple
of 4 channel USB + MIDI USB interfaces mentioned and seeing whether I can
replace my ailing Classic Keys module, which only gets used for mellotron
sounds.
Len: the USB keyboard definitely wins for cheap and simple, but I think I'm
more likely to use something like a NanoKontrol or build something custom
on the back of an Arduino.

I guess it depends on how close you want to go to the metal :)
An Arduino Mega might be an interesting option for interfacing. You'd have
8 analog inputs, about 40 digital I/O and 3 native serial ports than can go up
to 115200 baud, as well as I2C.
If you use something like ttyMIDI on your host machine you could separate
controllers and actual keyboard messages onto different ports which should
eliminate possible contention.

Remote control? certainly not! Local control for a headless box only. Blue
tooth KB or wiimote might do remote work, but USB is not suited. My
thought in meantioning the keyboard was that just because the keys have
charactors on them does not mean each key can not be used as a function
key. Possibly only a numeric keypad would be enough to control the
mini-box-of-stuff. And it would be permanently attached. The idea of
midifying the keys at all is a matter of making it compatible with synth
control, but any other control (OSC) would work too. In the end I would be
looking for something in the form factor of a MOD. A metal box with a few
buttons and a display.

The MOD really is a game-changer. Rugged construction and minimum necessary
controls when live on stage, massively expanded what you connect it to... just
about anything!
