Hello,
Is there some program that will render a soundfont performance of a
standard midi file to WAV? Ideally, I'd also like it to provide some
way to map MIDI channels to soundfont files/instruments, but a
configuration file is great for that.

Take a look at timidity which can output to wav. Don't know for the instruments
mapping.

If you use a GM (general midi) soundfont there's non need to map
instruments, since they are already mapped to the GM specification.
You can find a lot of soundfonts on http://www.hammersound.net and there is
a section specifically devoted to GM soundfonts.
