I'm somewhat envious of people who can work like that across multiple keyboards
and interfaces. I can only hold two 'lines' in my head at any one time. Often I
will add tracks once the main theme is fairly settled, but I left it too long
on this occasion, so was well out of the 'zone' by the time I thought about it.

just as a wild and possibly off-base suggestion, you might enjoy checking
out mik300z's vangelis covers, not necessarily for the music, but for the
videos that show his "technique" which isn't particular special, but
things do become quite clear. My favorite of them:
