my default midi output from the MPU401 port to the

Not sure if you can, really. You can use kaconnect to display all the
MIDI outputs and then hook up whatever ones you want. kaconnect will
also show your soft synths and sequencers if you are using any.

Lots of ways but from a shell you can type "aconnect -lio" and
see all the ALSA ports and then connect from/to whichever by
using something like "aconnect 64:0 128:0".
