Hi list,
I am wondering how I could make a VU meter automatically receive all
audio that is sent to specific jack output ports by various
applications, also from those that I will start later on a given day.

Jack outputs can route to multiple places, so just route the outputs to
your sound card, or wherever you want the audio to go as primary, and also
connect those jack ports to meterbridge or a similar app:

Qjackctl's patchbay can be used to automatically redirect everything that goes
to an output, also to another one.
I use it to have everything that goes to out 1-2 (the main outputs),
to be sent also to out 7-8 (the headphone outputs) on my 1818VSL.

3. then edit output_socket_1 and set it forward to output_socket_2.
save and activate this patchbay profile.
from that moment after anything connectes to system:out_1,2 (main outs)
will automagically also connect to system:out_7,8 (headphones in
Emanuelle's example).
