Pan is a word used by recording studio geeks. Balance is a word used by hi-fi
geeks.
I think the key difference is that pan is something you do to a single
mono signal, while balance is something you do to a stereo signal.
Specifically, Pan deals with the proportion of the mono signal fed to
left and right, while balance controls the difference in level between
left and right of an existing stereo signal.
