What is the best sort of filter to use, to remove low-amplitude sounds
from a given recording and/or live source?

A noise gate would be my choice as long as you're looking to filter
everything below some amplitude.

Wrong question I'm afraid. The action of a filter does
not depend on amplitude.
What sort of sounds do you want to remove ?
