I'm trying to figure out if it's possible to get ams to respond to velocity
midi messages. I can see the velocity socket on the MCV module but can't see
how to connect this in a way that will control the velocity of the note.
Any ideas?

You can use velocity to manipulate any parameter in the synth-patch you
like.
Any ideas?
To simply make the notes sound louder/lower try to connect velocity to a
gain-in of a VCA and the output of your signal to the input of that VCA.
